To add a password to a document in Pages you need to tick the Require Password To Open option at the bottom of the document (first icon on the left) section of the document's Inspector.

I highlighted the hyperlink and then selected the underline icon and the underline went away. I couldn't believe it was that easy. Tried it after first tearing my hair out. :)
