Basically, to joust you usually need something to stab the other participant(s) with and something to ride on (traditionally a horse). Since we are talking Bike Jousting you will most likely need a bike in this case.

Pick your stabbing utensil: long and sharp if you hate your opponent(s). You might want something smaller and less sharp if you are jousting with friends. I usually pick something in between (a mop, used toilet plunger, etc)

Ride away from the other participants a certain distance, turn around and accelerate towards them as fast as you can. They should be doing the same thing at the same time. Once you are close enough, lower your stabbing utensil and stab your opponents where ever it hurts most. The idea is to knock them off their ride/horse/bike... not to hit them with your bike.
