1. Remove the scales by scraping from the tail towards the head with a serrated butter knife.

2. Cut from the vent to head to open the body cavity.( You can use scissors.)

3. Cut off the head and scrape out the entrails. Rinse very well in running water.

4. Make sure there are no pieces of the entrails or excess blood in the cavity. (You can use a small brush.)
