The same way you crochet any other yarn, though I expect it would be hard work as most strings are quite hard and rough. The size of hook would depend on the thickness of the string. There are some natural yarns which are much smoother and would still give the appearance of string.

I do it by knitting the sitch that I want to put the bead on, making the stich really loose, slipping it off the needle, putting the bead on, and then putting the stich back on the needle.

By tieing one end of the string to a needle at then just start putting beads over needle and pass it through it. Beads will easily slide in the string and then you are done!
