One way is very unhealthy, but good. Pull the stems out of the mushroom, peel the "skin" off the cap, and lay them cap-down in a shallow baking dish containing chunks of butter. Fill the caps with shredded mozzarella cheese and sprinkle them with lemon pepper. Bake them at about 350º F for about 25 minutes (or until they are tender).
