(Makes 8 tortillas)

4 cups of flour

1 tsp. baking powder

1 tsp. salt

1 cup of water many substitute warm milk for a fluffier texture)

1/2 cups vegetable shortening (or lard)

Mix flour, salt, & baking powder in a large bowl. Cut in shortening/lard until lumps are gone. Make a hole in the center of the dry ingredients. Gradually add water and work mixture into a dough. Knead until smooth. The dough should be slightly sticky but not hard. You can add slightly more water or flour if needed. Cover and set aside for 10 minutes. Make the dough into balls about the size of eggs. Using a rolling pin, roll each dough ball into about a 6 inch circle. Heat griddle or skillet on medium heat without grease. Cook tortilla 30-60 secs (if it starts to bubble, that's long enough). Flip tortilla to the other side and cook for a few seconds. Continue until all your dough is cooked. Then you can eat!

  • 1 tablespoon butter
  • 2 flour tortillas, whatever size you want
  • 1 cup shredded cheddar cheese, more for bigger tortillas
  • salsa, however much and whatever heat you desire, for topping (optional)
  • sour cream, as much as you like, for topping (optional)
In a pan skillet large enough to hold one of the tortillas flat, melt ½ of the butter.

Fry one side of one of the tortillas, then remove it from the pan.

Put the rest of the butter in the pan, then put the unfried tortilla in to cook.

Immediately sprinkle the cheese on top of the tortilla in the pan, then top with the previously fried tortilla, browned side up.

Press them together with a spatula and fry the quesadilla until the cheese is melted.

Remove it from the pan and cut in wedges like a Pizza.

Top with sour cream and/or salsa.

By burrito dough I'm assuming you mean the tortilla that a burrito is wrapped in. So, where I'm from burritos are made with flour tortillas. While my wife is the expert I can tell you the basic recipe and then I recommend you practice, practice, practice. Flour tortilla recipe (basic)

2 cups flour

1/2 teaspoon salt

1/4 vegetable shortening

2/3 cup warm water Using a fork mix the shortening or lard into the flour and salt until the the pieces of lard are smaller than peas. Then slowly add the water to the mixture. You may need more or less water depending on the brand of flour, humidity and your measuring style. The dough should be slightly firm. Next either using a tortilla press or rolling pin form the dough into a flat circle. The desired size will vary depending on what you want to use the tortilla for. Preheat a cast iron skillet or tortilla pan to medium to medium high heat. Place the tortilla on the pan and cook until small light brown spots begin to appear on the bottom. (Check a few times to become familiar with the amount of time it takes.) Then turn the tortilla over and cook the other side the same. We lightly wrap our tortillas in a thin "flour sack" towel until ready to serve. That keeps in the moisture and warmth. Serve immediately. If you have to store them. You can wrap them in plastic wrap and refrigerate. The more you practice the better you will become. For instance, if you roll your tortillas out with a rolling pin you will vary the amount of flour you need on to put on the surface based on what kind of surface you are using. (We use more flour on our counter top than on our glass table.) There are several other "tricks" you will learn as you go. My wife learned from her mother and her mother learned from her grandfather and so on.
