There are many ways. But, since I'm ahardcore player at Sonic, I don't know any specific ways to unlock them. I just played Sonic 1, 2, 3, and Sonic and Knuckles. Play nonstop on these games, and you'll unlock:
1. Knuckles in Sonic 2
2. Sonic 3 and Knuckles
3. Blue Sphere
4. I'm not sure, but maybe Knuckles in Sonic 1

Knuckles is not unlockable is story mode, but he is playable in competition mode. Note that Knuckles cannot glide in competition. If you lock on Sonic 3 to Sonic & Knuckles you can play through Sonic 3 story mode as Knuckles. He can glide in Sonic 3 & Knuckles. He is also playable in Sonic 2, if you lock on Sonic 2 to Sonic & Knuckles. It would be Knuckles in Sonic 2. He can also glide in it.

If you are talking about the original Sega Genesis version, they are not hard to come by. You can find them at classic game stores or even Ebay. If you want more than just the classic Sonic the Hedgehog, Sonic Mega Collection for PS2 and Gamecube has many classic Sega Genesis Sonic the Hedgehog games. These include: Sonic the Hedgehog, Sonic 2, Sonic 3, Sonic & Knuckles, Sonic 3D Blast, Dr, Robotnik's Mean Bean Machine (Tetris style gameplay), and Sonic Spinball
If you are referring to the DS console, well the answer is no. There are actually a couple of games that are not a Sonic Rush derivative. For example, Sonic and Sega All Star Racing and Sonic Classic Collection. There are a couple more though.
