Carefully. First, do not let a contractor merely stuff the space with insulation and then place the sheetrock. You must have them install what are called attic chutes or vent chutes between each rafter. Very easy and inexpensive to do. This insures air can travel up the sloped ceiling and to the attic or ridge vent above. Otherwise, you run the risk of condensation builing up in the walls which leads to mold which leads to unexplained sickness. And eventually you realize everything must be torn out and redone.
