It is used by Christendom to celebrate Christmas.
It was first used by St. Francis of Assisi in 1223.
Christmas was not celebrated by early Christians and was implemented in the 4th century to incorporate the pagan festival Saturnalia into Christianity to increase the members of the church.
Christians celebrate the nativity scene as an homage to the birth of Christ. However, The Bible accounts do not support Jesus being in a manger in the middle of December.
The "three kings" were in fact, astrologers who were following a star to find the newborn Messiah.
Only angels were recorded to be with Jesus in the manger:
(Luke 2:15-20) 15 So when the angels had departed from them into heaven, the shepherds began saying to one another: "Let us by all means go clear to Beth′le·hem and see this thing that has taken place, which Jehovah has made known to us." 16 And they went with haste and found Mary as well as Joseph, and the infant lying in the manger. 17 When they saw it, they made known the saying that had been spoken to them concerning this young child. 18 And all that heard marveled over the things told them by the shepherds, 19 but Mary began to preserve all these sayings, drawing conclusions in her heart. 20 Then the shepherds went back, glorifying and praising God for all the things they heard and saw, just as these had been told them.
When the three astrologers found Jesus, he was a young child.
(Matthew 2:7-9) 7 Then Herod secretly summoned the astrologers and carefully ascertained from them the time of the star's appearing; 8 and, when sending them to Beth′le·hem, he said: "Go make a careful search for the young child, and when YOU have found it report back to me, that I too may go and do it obeisance." 9 When they had heard the king, they went their way; and, look! the star they had seen [when they were] in the east went ahead of them, until it came to a stop above where the young child was.

The first mention of a Christmas crib is in the bible, when the baby Jesus was laid in a manger. However, it was in 1293 that St Francis of Assisi put a cr̬che in the woods on Christmas Eve and gathered some people for a service. It is said that the babe appeared in the crib. The idea of having a crib in a town to celebrate Christmas was soon adopted all over the Christian world.

Cribs represent the crib that Baby Jesus was born in on Christmas.
There is no right or wrong time to take down the Christmas crib. Many people leave decorations up until the new year and others remove them the day after.
