First you have to place the chest somewhere where there won't be a block above it, then you right click on it. You can manually place things in there, or you can hold Shift and Left click an item to put it in the top-left most open space in the chest.

Melons are not found in any biome. You can only find melon seeds in chests that the world generates itself. This includes dungeon chests, abandoned mineshaft chests, and stronghold chests.

Like the PC/Mac edition, I'm pretty sure you can only get saddles in chests that spawn randomly in the world, such as dungeon chests, abandoned mine shaft chests, and stronghold chests.

They can get into your ender chest, but they will not be able to see your items. Contents of Ender chests are private for all players.
The "too many items" mod jacks up chests. Turn it off, or accept the limitation.
