You can't, really, it just runs around randomly. You can hit it while you ride it to try to make it run in the opposite direction.

Minecraft doesn't have projects. If you want to have a project to, say, make a cannon, just make the cannon. You might mean "How do I make a world", just press Singleplayer and New world.

No. You can type chat by pressing "T" and typing what you want to say. So far there's no way to verbally communicate in Minecraft. My friends and I use Skype while playing Minecraft together.
