scoop out avocado from skin and mash with added sugar to your taste. just spread avocado jam on bread to make sandwich.we make this jam in hawaii,don't know if they make it anywhere else.

mix the cut up fruit with water and stew - a green scum will form on top - this is believed to be dissolved latex - you must skim off all of this green scum or the jam will be gummy. Then add sugar to improve texture and sour Orange Juice and a strip of peel to offset the sweetness. cooking with sugar changes the brown flesh color to a pleasant red.
