When you get to the main menu screen, before you choose any game mode, press start. It'll bring up the "Sign In" menu and have your buddy (or whoever's playing) choose a gamer profile (or guest, either way it doesnt matter). After that the 2nd player will automatically be playing with you, no matter what mode you play until he/she logs out or the console is shut off.
