First you have to get along really well with them so they like you a lot, then leave (don't let them catch you anywhere- don't let them see you anywhere) and don't go near them again for ages then if you want suddenly turn up and be talking to someone else (too busy to talk to them). You don't really need to spend ages away from them, just some time, and if you want to hear it for yourself out of their mouth, you just suddenly pop up next to them going about your own business, then that person would most likely bring it up to you, "Oh, Hi! I never seen you around. I miss you. How are you? I am sorry about the other day. I am really sorry."
