SWEET POTATO PUDDING 2 c. raw grated sweet potatoes

1 c. brown sugar

1 egg

1 c. milk

1/2 tsp. salt

1 tsp. vanilla

3/4 stick butter Melt butter in casserole and pour excess into pudding mixture. Bake at 350 degrees for 1 hour or until firm.

1/2 cup Tapioca 1 1/2 cups milk 1 1/2 cups cream 1 Vanilla Bean 1/2 cup Sugar pinch salt 2 egg yolks Soak Tapioca overnight in water. Heat milk, cream, vanilla bean and drained tapioca until simmering. simmer on low heat for 1 hour. Will need to stir it quite often. Add sugar and salt. bring back to simmer and be careful as it could begin to stick and burn. Beat egg yolks and add a small amount of tapioca ( this stops the egg "cooking") slowly add the rest of the tapioca,small amounts at a time until all added. Pour into serving dish and let cool.

Classic Sweet Potato Casserole

Ingredients:

3 large sweet potatoes, scrubbed

2 large eggs, lightly beaten with a fork

3 Tbsp. unsalted butter, melted plus more for the preparing the pan

2 Tbsp. brown sugar, firmly packed

½ tsp. kosher salt

½ tsp. ground cinnamon

1/4 tsp. ground ginger

Pinch of freshly grated nutmeg

Freshly ground black pepper

1/8 cup coarsely chopped pecans

1/2 bag (8 ounces) mini-marshmallows

Directions:

Preheat the oven to 325*F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 60 to 75 minutes or until tender. Set aside to cool.

Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. MASH the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth. Fold in the pecans.

Butter a casserole dish. Pour the sweet potato mixture into the pan and sprinkle the top with the marshmallows. Bake for 30 to 40 minutes until a bit puffy and the marshmallows are golden brown.. Serve hot. Yield 6 servings
