The enemy of every mummy is moisture. Be it man, cat or vegetable (or are they fruits?), you need to remove moisture in order to preserve organic material for a long time.
The ancient Egyptians did this by drying much of the body out with salt. However, this will probably result in "pickling" of your tomato. If you can access some very dry alcohol or vodka, you can dilute the water inside the tomato enough that it will evaporate before it rots.
After the tomato has dried. fill it with honey to maintain it's shape. Honey is an amazing natural preservative; it does not rot, and has been found in Egyptian tombs, still edible. You can further place the tomato entirely in honey, or wrapped it in tight bandages.
