Right click on it.
If you don't have a right mouse button, buy a modern mouse, then right click. Or do whatever you do to bring up a context menu, place blocks in the game, etc.
An Iron Door requires charge to open, this can be provided by an adjacently placed button, lever, pressure plate, etc.
You can create doors at the relevant crafting stations, depends on which material you want it to be made out of. For example, wooden doors can be made at a Work Bench, iron doors at an Iron Anvil, glass doors at a Glass Forge, etc.
All it takes is 6 units of the appropriate material, except for Iron or Lead doors, which take only four bars each.
If you are standing close to a door, then the cursor will change into a door icon; you can then right click to open or close the door.
The door must not be obstructed, if it does not open, then something is in the way.

Not officially, no. (at least that I know of) However, there are some unofficial ports that some forum members developed. Although they are not official and may contain bugs, they still work and are the only way you can play terraria on macs (other than bootcamp and wine). Go check the terraria online forums.

Like the PC/Mac edition, I'm pretty sure you can only get saddles in chests that spawn randomly in the world, such as dungeon chests, abandoned mine shaft chests, and stronghold chests.
