Hexane does a fantastic job. A drop of butter fell on my nice tan leather shoes, and I cleaned it up completely with Hexane. If you don't have Hexane, your dry cleaner's solvents will also work great. Alternatively, try covering the entire area in baby powder and let it set for 12 hours.

Water and oil do not mix. To dissolve stains, you have to use the principal of like dissolves like. An oil or alcohol will dissolve greasy stains.
Salt is water soluble; just wash. After washing the salt off, let the shoes dry and apply saddle soap, mink oil or neet's foot oil to restore the moisture to the leather and keep it from cracking. For light-colored leather and suede, saddle soap will be less likely to discolor or stain like oils will. Test a small area first.
