Hello just to help you out with your water stained issues. i have a wonderful remedy .just pour lemon juice from a bottle on to the stained area leave the lemon juice to float onto for appx.1 minute. then wipe of with paper kitchen towel you will begin to see the effects with in the first 5 minutes when it begins to fade until it becomes barely visible :)
If it's an oil stain than I'm afraid you may struggle as depending on the density of your timber, oil will most certainly soak into the timber. Generally speaking a very light grade sandpaper and a sanding block will remove most stains without affecting visibly the run of the grain.
