You make a dye (there are many, with different ways to make them) and use it on the sheep. So one example, pick a rose, put it in your crafting slot to make Rose Red. Put the Rose Red in a quickslot and use it on a sheep, to turn it into a red sheep.
For survival, you can't make a spawn unless you breed 2 sheep. Feed them both wheat to get a baby sheep.
