While the word etnicidad may look like a likely translation for ethnicity, and while it is used in Spain on a fairly regular, contemporary basis, still, it is not to be found in the current edition of the Diccionario de la lengua española, 22a edición, the official dictionary of the Spanish language. That is to say, etnicidad's just not an official Spanish word. Two official Spanish words that can be combined to mean ethnicity are origenétnico.
