You address everyone you are speaking to. "Honored guests", "Friends", "Esteemed colleagues", "Everybody", that sort of thing.
One should always first greet your audience starting with prominent guests / dignitaries, and working down to "ladies and gentlemen". Depending on your type of speech (motivation, information, argument), you may open with a question, a declarative sentence, or just begin with rhetoric, but it should always focus the audience on the subject or intent of the material you are about to cover
When you are writing a play or writing what somebody has said you put it in speech marks "then you write what you what" , so you have speech marks at the beginning and the end of the sentence you want to say.
