When a noun (Saturday) is used as an adjective to describe another noun it's called a noun adjunct (or attributive noun).

Examples:

There is a lot of anticipation for the Saturday game.

We have a larger than usual turnout for our Saturday service.

Saturday afternoon is our busiest time of the week.
