McDonalds uses a 2 step cooking material for their fries.

They are chopped, precooked(This is called blanching, it blast cooks the middle to ensure they are cooked thoroughly once at the restaurant) then bagged.

Then they are shipped off to Micky D's all over the world where they are dumped into a frybasket, and deepfried, (set on timers so every order is cooked evenly)

They are cooked for exactly 3 minutes 10 seconds, and after 35 seconds they are shaked, and put back until they are done.
