White fur is harder to see against a background of white snow. And since polar bears hunt seals, it is to their advantage to be able to sneak up on seals without being seen too early.

The fur color helps them survive by catching their prey. They cover their black noses with their paws to be completely camouflaged too. Their fur "color" also helps to absorb sunlight to avoid freezing as their fur isn't actually white, but clear. The color comes from the reflected sunlight.
