Inorder to answer this question it is best to understand convection.

When water is heated the particles pick up energy therefore rising to a less dense area where they are free to move arround, the particles then lose their energy and fall to join all the other particles.

Heat tends to dissipate where possible. Water, being a liquid, allows for both conduction and convection to move heat around. Conduction is simply the direct transferal of heat from one molecule to the other, but convection is the physical movement of molecules based on heat, and the reason why hot air rises and cold air sinks.

Example: when you leave a glass of water out with no ice, it will become almost the same temperature as the room.

So therefor that's how water cools to room temperature.

Mainly three reasons. (1) It's usually readily available, and cheap. (2) It has a high heat capacity. This allows it to absorb a large amount of heat. (3) It is a good conductor of heat.
