When you add heat to water, the H20 molecules receive energy and move around rapidly making the water bubble. When you remove heat, just the opposite happens, the molecules slow down, and get closer to solid form (ice). This makes the water more still, which isn't very noticeable to the naked eye until ice starts to form.
