You can see stars that are light-years away.

If you want to know the distance of the horizon, this will depend on the height of the spot where you are standing and your own height.

There's a calculator at: http://newton.ex.ac.uk/research/qsystems/people/sque/physics/horizon/

The eyes do not see out in a straight line, it is the light entering the eyes that appears to be coming to the eyes in a straight line. The furthest object visible to the unaided eye is the Andromeda Galaxy which is 2,538,000 light years away.

Why does light travel in straight lines give with evidence?

Yes there is. Your shadow is the simplest evidence that light travels in straight line. A solar eclipse is also evidence that light travels in straight lines, as is the fact that you cannot see around corners unless you use a mirror.

Why light passes undeviated falling straight on a refracting medium?

If by "straight on" you mean at 90 degrees to the surface of the medium, that is because light is only deviated if it makes an angle with the normal, which is an imaginary line perpendicular to the surface of the medium. If no angle is made between the normal line and the light ray, then no refraction occurs and the light passes through in a straight line. For more information see the related link below.

If you look far enough away can you see Earth in the past?

No. If you look far enough away, you will see OTHER objects in the past. For example, if a galaxy is ten million light-years away, the light of this galaxy took 10 million years to reach us, so we see this galaxy 10 million years ago. Earth's light, from millions of years ago, doesn't come back to us, since (roughly speaking) light travels in a straight line, and moves at the speed of light (300,000 km/sec).

Why don't most stars show a parallax angle?

Because they are much too far away. If you stand in the line of a series of telephone poles that are in a reasonably straight line, you can see that when you walk a few steps from side to side the pole nearest to you moves across your field of vision quite a bit (apparent motion). The farther away the pole is, the less apparent motion you can measure. The idea is very similar to this.
