I've been asking this very question myself, the best answers I could find related to donating blood. Apparently it takes 3-4 weeks to regrow the red blood cells lost in one pint of blood. the fluid itself is made up in less than 24 hours, and the iron takes longest to replace, at 8 weeks.

Interestingly enough, Wheatgrass is supposed to help stimulate the growth of red blood cells, although this is from a website trying to sell Wheatgrass, so who knows...

hope this helps!
