When you are holding an ice cube, heat moves from your hand to the ice cube. Your hand is warmer than the ice cube obviously and therefore the heat from your hand is transferred to the ice cube (which eventually causes it to melt).

I think that the ice cube's particles move around and well gets cold in your hand since the heat from your body left your hand and went towards the ice cube which is why it made your hand colder.this is because due of process of evaporation because evaporation cause cooling.when can also take an example-

when we pour some drop of acetone on our palm it will feel you cool because particle of acetone gain energy from surrounding make our palm to feel cool.
