You should begin the process at about 6 weeks, removing the strongest, healthiest kits first. Then remove one or two every other day until they are all weaned from their mother. They should all be weaned by 8 weeks of age. You do it gradually like this so your doe does not get mastitis.
Not more than a day or two as the rabbit does need to eat. Like a dog you can't give a rabbit a giant bowl of pellets and expect him/her to ration them out for a week. The rabbit will likely eat them all in a day or two and then starve. Rabbits have a very fragile digestive system and can die from starvation in just a few days.
