The time to actual spoilage is uncertain. From a safety standpoint, potentially hazardous food - like beef stew - should not be unrefrigerated for more than 2 hours. At that point it should be reheated or refrigerated.

I would only keep Beef Stroganoff in the fridge for a couple of days. You may be able to keep it for longer if it does not have any cream in it. To be on the safe side I would freeze it and then defrost thoroughly before reheating.

Depending on how the stew was cooked and which meat it can be between 3-5 days. Make sure the pot is covered. Freezing it gives it a 2-3 week lifespan
