Nobody knows how long it took Shakespeare to write any of his plays. All we know is that they had to have been written before people said they saw them in the theatre, or they were licenced for performance, or they were published in book form.
The length of the play may vary greatly depending on the way the director cuts it- many do choose to abridge or rearrange scenes in the intrest of time- and these are commonly between one and a half and three hours in length. Shakespeare's original also varies in length depending on which version is used, with whole scenes being added or deleted between each official folio (the "Bad Quarto" is the most severely abridged, but I can't imagine anyone would really put that one on professionally, except for the purpose of comedy.) Anyway, most versions of the original script run quite long, up to the three to four hour range.
We don't know, because we don't know when he started. A play on the subject of Hamlet was performed in 1593, and if this was the same one as we have today, he might have been over seven years revising it. Indeed the differences between the three main texts of the play we have suggest that he was constantly revising it.
However, the early play may have been someone else's work, and Shakespeare may have decided to write a better play on the same theme, but less old-fashioned. If so, he probably had it done in a couple of months.

Rosencrantz and Guildenstern do more than one job for the king. The first is to try to draw Hamlet out in conversation, so they can know what is on his mind. Later they accompany Hamlet to England.
There are tons of questions that are asked about how conflicts plays out in Hamlet. The main question would be why does it take Hamlet so long to get even.
