Someone said "about an hour" but I believe, since it takes roughly 20 minutes per pound in a 350 degree oven (that's 2 1/2 hours for 7.5 lbs), that it would take at least four hours in a slow cooker, and possibly longer depending on the temperature of the cooker. To cook to medium-rare doneness, the internal temperature has to be 145 degrees fahrenheit, and 160 for medium. Don't cook it more than that, or consider using a less expensive cut of meat.
