It depends on hw long you want to leave it in the freezer, you could leave it there forever. But if you want to know how long you should chill the glass before it gets cold before using it then I don't know.

I am going to guess you mean a freezer or Refrigerator as an Ice box will be as cold as the ice you put in it. Two hours should have a house fridge or freezer down to temperature. An RV fridge could take 8 hours according to the manufacturer.

uncooked carrots yes but not as long as semi-cooked carrots. You want them to still have a bite to them. They might loose their color in the freezer.
