While it is possible to freeze mashed potatoes, and they will be safe to eat when thawed and warmed, their texture will suffer. Many people do not care for the watery texture of frozen and reheated potatoes of any sort. Cream cheese and sour cream would improve the final texture.
Mashed potatoes will keep for a week in the refrigerator but you won't get good results just reheating them. When you reheat them, mix in a couple teaspoons of milk or cream to 'limber' them up. You can also form them into (hamburger-size) patties and fry them...That usually works out nicely.
Leftover potatoes change flavor fairly quickly. I'd only keep them until the next day.
