The rough sorface of the mentos releases the carbon dioxide dissolved inside the coke (H2CO3), but the mentos is small, and can only hold a little ammount of the carbon dioxide. But once the carbon dioxide is released, this reaction cannot be reversed, all the excess carbon dioxide rushes out. This set-up will work best on diet coke because it contains no sugar to act as impurities.
