There are many groups and organizations that list how many animals die per year due to abuse. According to the Humane Society over 30 million animals die each year due to neglect, cruelty, and exploitation.
Nearly every city has a humane society or something like that. They'll always take in strays.
Animals with fleece that can be turned into wool are found on every continent except Antarctica.
You can volunteer your services at the local Humane Society. They have a lot of different duties you can perform and usually need lots of help taking care of their rescues. The local Houston (TX) Humane Society is looking for volunteers with a camera to take pictures of the different animals that are up for adoption. I know you're not coming to Texas, but that is just an example of what there is to do. It would be an excellent way to get experience working with different animals and you would feel good about yourself at the end of every day! Come back and let us know if you did something like that, OK?
As a collection, the various dog pounds, shelters and humane organizations euthanize the most animals every year - they have to manage their on-site populations of abandoned animals, and in many cases they have no choice but to euthanize for either humane reasons (severe illness, traumatic injury, etc) or for population control reasons (no room, unlikely to be adopted, etc.).
Every State in the United States has their own Animal Cruelty offices and places. That stop animal cruelty. But I have included a website that shows you the History of The Society for the Prevention of Cruelty to Animals Which was actually founded in 1866 that is a long time! Today they are based out of Washington, DC and are called: Humane Society of the United States. (HSUS) With 9 regional offices and 8 affiliates and one arm internationally. Here is the website where I got the information from: http://animals.howstuffworks.com/animal-facts/humane-society1.htm
In shelters alone, approximately 3-4 million cats and dogs are euthanized every year. It is hard to get a completely accurate answer, because not all shelters report, or are required to report all euthanasias. These numbers are from the Humane Society Website.

My answering this question just proves that you learn something new every day. I was expecting to look this up and find the Humane Society of the United States, but I came across this instead. The following is directly from the website of the American Humane Association.= = = Who We Are =Founded in 1877, the American Humane Association is the only national organization dedicated to protecting both children and animals. A nonprofit membership organization, American Humane is headquartered in Denver. Through a network of child and animal protection agencies and individuals, American Humane provides national leadership in developing policies, legislation, curricula and training programs -- and taking actions -- to protect children and animals from cruelty, abuse, neglect and exploitation. Hundreds of child welfare and child protective services agencies and professionals are members of American Humane. In addition, hundreds of local humane societies, SPCAs and animal control agencies across the country are member organizations of American Humane. As members, those individuals and organizations benefit from the national leadership, expertise, resources, information exchange, trainings and programs that American Humane provides. American Humane also raises awareness about The Link® between animal abuse and other forms of violence, as well as the benefits derived from the human-animal bond. Our regional office in Los Angeles is the authority behind the No Animals Were Harmed® end credit disclaimer on film and TV productions, and our office in Washington advocates for child and animal protection at the federal and state levels.
You asked why did animal shelters start? Maybe because there were dogs and cats etc in need that people cared about and dhat needed home and support because noone wants children and little kids and sometimes adults getting bit.
According to the Humane Society, between six and eight million dogs end up in shelters across the country each year. Of those, between two and three million are euthanized.
According to the Humane Society, birds do not hibernate. Birds deal with cold temperatures and dwindling food supply by flying to warmer regions during the winter months
