There are 6 'main' Companion quests, and 13 variant 'Radiant' quests, some of which are one-offs or otherwise limited. Some radiant quests must be done before you can continue with the main quests.

The only animal u can turn into is a werewolf but you will have to be a companion
If you've finished the final Companion's quest, Glory of the Dead, you can take Wuuthrad from the statue of Ysgrammor. It won't close any doors or anything, so you can still get in to the place where you can cure your lycanthropy.Hope this helps :)
