How many eggs does a cornish hen lay?

Cornish hens are not bred for egg production and therefore will not lay as many eggs as, say, a white leghorn would with egg production off an egg a day. Cornish may only end up laying every other day at most... This is because the Cornish are bred for meat, and have very low capacity for egg production.

Cornish hens (an all white meat bird) weigh on average about 1 1/4 lbs., though anything between 1 and 2 lbs. is normal. In order to meet USDA requirements, Cornish hens must be slaughtered between 4 and 6 weeks of age and weigh no more than 2 lbs.

One Cornish hen per person is considered an appropriate serving, though larger hens can be split in half to feed two people.

Most sources credit the Makowsky's of Connecticut for developing the small bird in the mid-1950s, while other historians crediting Donald John Tyson of Tyson Foods with the initial idea for breeding and marketing the hens in the 1960's.

A Saturday Evening Post article from July 1955 credited Mrs. Makowsky with coming up with the idea to breed the Cornish game chicken, a small bird with short legs and a plump, round breast that she had discovered in a book. The Makowskys began cross-breeding the Cornish game cocks (male chickens) with various other types of chickens and game birds, including a White Plymouth Rock Hen and a Malayan fighting cock, to develop the Rock Cornish game hen, a succulent bird with all-white meat suitable for a single serving.
