A harp does not have keys like a keyboard; the strings are plucked with the fingers.

It all depends how the builder built it. Every harpsichord builder builds theirs differently. Each keyboard usually has around 62-68 keys
Some have one (single manual), others have 2 (double manual), and very rarely there are some with 3.

I am not aware of any instrument having 88 strings. Pianos generally have 88 keys but there are more than one string for each key. The Triple Strung harp or Welsh harp has 88 strings the same amount of strings as keys on a piano, but these are exceedingly rare, so I wouldn't worry about this one. Organs vary the most. Some Organs have one Keyboard, others have 2, 3, 4 and sometimes 5! The present main console is normally four manuals of 61 keys each, so the total is 244 manual keys. And there are 32 pedal keys.

I believe that the pedal is there for accidentals (sharps and flats). I believe that the strings on a harp are just the "regular" notes, like the white keys on a piano, and if you want sharps or flats you've got to pedal to get it.
