It depends on how large the fleece is, how dirty it is, and how much is lost in skirting. Probably at least half will be lost in processing before it even reaches the spinning wheel, but some fleeces are simply of better quality and have less waste than others.
One ounce of alpaca fiber should yield approximately one ounce of yarn. However, there may be a little loss if the shearer created quite a few "second cuts" (pieces too small to spin). I have skeins that vary from 15 - 60 yards per ounce, depending on the thickness of the yarn. The 60 yards per ounce is probably an average size yarn - what you might buy if you did not already have a particular project in mind. Many spinners can create much thinner "lace weight" yarn and end up with a single ounce creating a 100 yard skein of very fine yarn. A two ounce skein of approximately 100 - 120 yards is perfect for a hat - you'd need two (that means four ounces) for an average scarf.
