Think pounds of meat instead of number of pieces. For an entree dinner service, plan on 1/2 lb per person plus a little extra; 40 - 45 lbs. For a lighter service like lunch or brunch, you should plan on 1/4 lb per person plus a little extra; 20 - 25 lbs.
