Many dozens would be the number of extinct volcanoes in New Zealand.
On the Banks Peninsula complex, there are several, and again further south, there is a intermittent line of volcanoes running close to the coast from Oamaru, to south of Dunedin. The Kakanui Range, running inland between Oamaru and Palmerston, has another dozen perhaps.
And, these geographic features are even more common in the North Island, from the Central volcanic Group and running right up to Northland.

The Auckland Volcanic Field had a few tens of volcanoes - mostly of a 'one off ' appearance. Banks Peninsula, and the Dunedin Volcano are a pair of large South island volcanoes. From Oamaru running south along the coast to Milton, there is a chain of volcanoes. Along the Kakanui Range, north of the Maniototo, there are a number of volcanoes. And the Rock and Pillar Range has a few volcanics along its span.
