Racks of ribs are one of my favorite foods, so I eat them ( and compare) at many restaurants. I have seen the size vary from about 12 ounces to 2 pounds. This makes it difficult to answer your specific question and also I am confused by "minty people" . I guess this would better be asked of whomever is supplying these ribs.
All together you would need about 7.5 lbs. So it would not matter how many rump roast as long as they weighed 7.5 lbs in total.As to proper portions per person. 8 1/2 to 9lbs would be best should some people want seconds.Also you have to expect shrinkage during the cooking process.Hope this info helps ;)
It depends on the ribs, back ribs the only type we us come in various sizes even from the same butcher. Most back ribs will come with 12 to 14 ribs per rack, so cutting them in half each person will get 6 or 7 ribs. Some big eaters can eat a whole rack but most can eat half and that is a hardy meal. We served a buffet recently each guy got 3 ribs, a pulled pork sandwich and smoked beans. In that case a rack served 4 guys as long as each rack had 12 bones. Papa Bear's BBQ Caterting
Yes, if you are baking or roasting them they will over cook and begin to dry out if you cook them to long.

definitely, in fact this is how many restaurants do it, cook the ribs on a low temp(200 or 250) in the oven for several hours, take them out and throw them on he grill for a few minutes per side, basting with your favorite bbq sauce; mmm mmm good!!
