This can depend on the age blend of people coming for the dinner. Half young children under 12, the other half adults. 4-6 oz. of edible meat should be enough. Generally, holiday dinners offer a big spread so you may not need as much of the entree. If the ham is a half and has the bone, deduct about one pound from the weight. Deduct another pound if the end is an uncut shank that you may not want to serve at the dinner. If the group is all adult go for the larger portion amount. So often people feel they need to serve at least 8oz./person and then they have a lot of left over. Hopefully you know your group.
The amount of ham to prepare per person depends on whether the ham is boneless or still has the bone. For boneless ham, prepare 1/2 pound per person. For bone-in ham, prepare 3/4 pound per person.
Determine how many ounces you want to serve for each portion. Multiply that by 20 and buy that weight in shaved ham.
you should put one or ma two slices of ham
I would allow 4 ounces per person.
About 100 pounds. Plan for 4 oz. per person which is 1/4 pound each.

I used to work at a deli and the rule of thumb was 1/2 pound per person.
The usual rule of thumb is 1/2lb per person. I Bought a 12 pounder for 10 people here in Korea last month and that was wayyy more than enough. Had plenty of extra for yummy samiches :)
I have researched this and you should provide about 4 oz of lunch meat and 3 oz of cheese per person. For heartier appetites you buy ham and turkey then you can reduce the meat to 3 oz each per person 3 oz of ham and 3 oz of turkey Hope that helps.

They say to allow about 1/2 pound of meat per person. A 6 pound ham should feed 12 people and an 8 pound ham should feed about 16 people.
