Given that there is no positive identification of who Jack the Ripper was, this question is impossible to answer.

However, witnesses who saw the victims with a man stated that the man they saw with the victim was 35-40. Some witnesses saw victims with men within minutes of their deaths, which means they probably saw Jack the Ripper.

Although age is a hard thing to gage in profiling a criminal most serial murderers begin killing before age 35. It should also be pointed out that the crimes speak of a younger perpatrator. Most likely mid 20s. JTRs crimes were out in the open on public streets and alleyways. This is indicative of a youger man. 20 year olds take more risks that someone pushing 40.
Jack was never aprehended so the age was not confirmed.

At this time it would be impossible to know for certain who the Ripper's first victim was. Martha Tabram, killed on Aug. 7, 1888, was most likely an earlier victim, several weeks before the murder of Mary Ann (Polly) Nichols who for many years, was believed to be the first victim of the Ripper. It is also believed that Mary Kelly was not the last victim either.

Jack The Ripper Was Around In The 1880's

Considering what is known about serial killers the Ripper was probably in his mid to late 20s when the killings began. That should give you an idea since the murders began in 1888.

As the Ripper has never been identified this fact is not known

However, several witnesses saw the victims with a man who was probably Jack the Ripper. They age the man they saw at about 35-40.

Cronalogical age is one of the most difficult aspects when profiling a criminal, as maturity can vary greatly. But I believe it is safe to say that when the Jack The Ripper murders began the killer was most likely on the right side of 30. This killer took tremendous risks that are usually associated with a younger killer.

When Jack The Ripper began and ended his crimes is hotly debated. But his first victim was most likely not Mary Ann Nichols. There is every indication that Martha Tabram was also murdered by JTR on August 8, 1888. Many feel that Emma Smith was the Ripper's first victim on April 3, 1888. I have my doubts about the Smith murder. Emma lived long enough to tell hospital workers that she was attacked by a group of ruffians, not a solitary attacker. And Smith was not assaulted with a knife. So the Ripper murders probably started earlier than was previously believed.

This is one question that may never have an answer. For over one hundred years the killer was thought to have only 5 victims, starting with Mary Ann Nichols on Aug. 31, 1888, and ending with Mary Jane Kelly on Nov. 9, 1888. This is probably not the case. Most Ripperologists consider the death of Martha Tabram on Aug. 7, 1888, as possibly the first victim. Others feel the murder of Emma Smith on April 2, 1888 was the first. But with the case of Smith, she lived long enough to describe her attacker(s). Smith claims to have been attacked by a group of thugs. All evidence clearly rules out multiple perpetraters, the Ripper worked alone.

Five women are usually considered definite Jack the Ripper victims. Their names and ages were:

Mary Ann "Polly" Nichols: 44
Annie Chapman: 47
Elizabeth Stride: 45
Catherine Eddows: 43
Mary Jane Kelly: 25 (that is the guess, anyway. We aren't sure)

Possible, though unlikely victims and ages were:

Martha Tabram: 39
Alice McKenzie: about 40
Frances Coles: 23

Noone knows for sure because the ripper was never aprehended. Years of research has revealed that some of the worlds most prolific serial killers either adjusted their homicidal fantasies to incorporate new aspects of trauma so most serial killers would be in the late 30s or older.
