some cheeses dont have to be refrigerated What I normally do is (I usually send cheddar) refrigerate the cheese to about 40°F(4°C) then wrap it in several layers of newspaper followed by a layer of bubble wrap (be sure to cover the ends too), then box it up and send...in view of the average delivery time it takes the postal services (of whatever country you are in) to deliver parcel post, especially at holidays, I recommend using Purolator, FedEx,, etc. as it will only take a couple of days. As long as it is wrapped airtight, most cheeses take a while to spoil so, if you are using a courier/parcel service, you could simply send it at room temperature (which is the way most cheeses taste best).
