Physical. they dry out or evaporate if you like. You will note that ice cream or other things that have water in them dry out as well if left frozen for a reasonable amount of time. A good example is hanging wet clothes out on the line in freezing weather. They freeze solid immediately you put them there but give them a litle time and they will end up drying just like they would if they were put out in the sun.
