∙ 15y agoIn baking, I have replaced grated zucchini with grated carrots, applesauce, or pineapple.
Baking soda will cause things to rise also. Muffins are smaller so there is not as much need for lift. Baking powder will give more rise than soda. Whoever created the recipe chose to use soda instead of baking powder.
You could use sugar substitutes like splenda etc. Be sure to check if the measurements are the same.

Actually, Italian squash is zucchini. Just another fancy name. :) I was confused too, because the organic ones at the store are tiny and seem to be different from zucchini. They aren't though.
To test if baking soda is still active, mix 1/4 teaspoon of baking soda with 2 teaspoons of vinegar. If it bubbles and fizzes vigorously, the baking soda is still good to use in baking. If there is little to no reaction, it is best to get a fresh batch.
Then you would be making Pineapple Nut Bread instead of Zucchini Nut Bread. With the increased acidity of the pineapple, you might need more baking soda. I suggest you look for a recipe for pineapple quick breads and make an ingredient comparison.
